The food system is not on your side. I think most of us know that now.

What fewer people know is that growing your own food, real food, enough to actually feed your family, is far more accessible than anyone is telling you. The complexity is manufactured. The overwhelm is a story. And the idea that you need perfect conditions, a big budget, or years of experience before your garden actually produces, that’s just not true.

Sugar Creek Farm exists because I got tired of watching people give up on something that could genuinely change their lives, because nobody handed them the real information without dressing it up in Pinterest aesthetics and vague advice.

I grow food on 11 acres in TX 8b. Brutal summers, pest pressure that would make most people walk away, and a mission that has nothing to do with a cute garden and everything to do with food sovereignty and what it means to actually feed yourself.

The pests will come. They always do. The question is whether your garden is built to handle them or whether they take the harvest before you do. I built the system that answers that question, ecosystem principles your garden already understands, no synthetic pesticides, no constant intervention, no helpless spraying and hoping.

What I wish I would’ve known before growing broccoli, because nobody tells you any of this.

I went into my first season completely clueless about how this plant actually *grows.* Nobody told me it sends out one main head, and that once you harvest it, the plant keeps producing side shoots (well the variety I was growing at the time). That detail alone changed everything about how I manage my garden in fall. You need a decent amount of broccoli plants for any kind of fresh eating (2-4 plants per person) or preservation purposes (an additional 5 to 10 plants per person for storage, canning or freezing).

So here’s the full playbook.

**Starting out:**
Broccoli is hungry and thirsty from day one. When I transplant, I go blood meal and worm castings straight into the hole, nitrogen is non-negotiable for this plant.

**Timing for TX 8b:**
Fall harvest? Start your plants now. Spring harvest? You’re looking at early January, or at least 4-6 weeks before your last frost.

**Germination:**
Expect seeds to sprout in 6-10 days, though mine just came up in 3. Once you see those true leaves (the second set), feed with fish emulsion at 1/4 strength. Diluted. Don’t go full strength this early.

**Transplanting:**
Wait until plants are at least 3” tall, I personally prefer 4-5”. Plant them 1” deeper than they sat in the pot. Stagger them in a zigzag, about 18” apart.

**Pest protection:**
Grow under pest cloth and you’ll have almost zero pest pressure. If caterpillars show up anyway, BT handles them.

**Harvest:**
Cut the main head when the buds are tight and fully formed, and there’s not a hint of yellow anywhere. Use a sharp knife to harvest the main head and leave the plant in the ground. It will keep sending side shoots until a hard frost hits or the heat causes it to bolt.

**Varieties I’ve grown:**
Rasmus and Kariba are proven winners for me. This season I’m testing Sidekick and Happy Rich, both mini broccoli varieties. Report coming.
